“My family had a cheese factory in Argentina (called La Mariposa) for approx. 10 years. My father, my brother and I were the cheese makers and my sister was in charge of the milking. I moved to Oregon in 2005 (married a girl from Pleasant Hill) and started making two kinds of cows’ milk cheeses (both recipes from Argentina). I use fresh cows’ milk which has not been treated with the recombinant bovine growth hormone, rBGH, and no antibiotics”.
“Chubut“: based on a Welsh recipe. It is a semi-hard pasteurized cows’ milk cheese, aged 4 to 5 weeks.
“Cinco Esquinas” (Five corners) is made with fresh raw milk, following our own original recipe. A semi-hard cheese that matures in 3 to 6 months.
